Back home in Europe my most frequently eaten dish is spaghetti bolognese, it is not my favorite dish, it is not the most exciting dish, but it is always delicious and gets the job done. In Ho Chi Minh City the cơm bò xào đậu hủ non at Phở 2000 is my spaghetti bolognese. It is a rice dish with stir fried beef, vegetables and tofu. It comes with plenty of ginger which creates the special flavor which I come back to time after time. I also really like the little vegetable soup which comes on the side.
There are currently two branches of Phở 2000, I prefer the one on Phan Chu Trinh street next to Bến Thành Market even though it can get packed with tourists at times. The restaurant is very simple in an almost canteen kind of way, but the service is good and some dishes are great. Apart from the above mentioned favorite, I can also recommend their vegetable curry and their noodle dishes with beef. Funnily enough Phở 2000 does not make very good phở, but there are plenty of places which do that so I am not going to complain.
This restaurant is perfect for lunch and I go here at least once a week. It is also very affordable with most dishes being around 50,000₫.

Phở 2000 is a small chain of affordable Vietnamese restaurants in Ho Chi Minh City. They came to fame when Bill Clinton visited one of their branches during his presidency in the year 2000. They serve the Vietnamese noodle soup phở and other basic local dishes.
